I was working on my meal planning for next week, since I am trying to grocery shop on Fridays for the next week. We are definitely going to be eating well Thanksgiving week!
- Sunday: Pasta with Butternut Squash Puree
- Monday: Black Bean Tortilla Pie
- Tuesday: Mushroom Tart and Salad
- Wednesday: Baked Ravioli
- Thursday: THANKSGIVING!
- Friday on is Leftovers – I will be COOKED OUT!
For my first Thanksgiving as a hostess, we are having a feast!
I’m making pumpkin scones for a breakfast treat. And then getting busy in the kitchen for our main meal:
Sweet Potato Dip with Chips and Veggies
Spinach Salad with Cranberries and Candied Pecans
Turkey (for my three guests who are complete omnivores)
Protein Mashed Potatoes
Roasted Brussels Sprouts, Cauliflower, and Carrots
Pumpkin Brownie Tart
Baked Apple Crisp
Four people will definitely not be able to eat all this food, so please come on over and share with us! The more the merrier!
And after Thanksgiving, I think I am swearing off pumpkin for a while! 🙂
