Life has been BUSY. No time for the farmer’s market, menu planning has been forgotten, grocery lists nonexistent. I am hoping my normal food planning/prepping/cooking schedule will be back to normal sometime next month. I have found I need the order of planning and cooking to function and relax in the midst of all the other crazy things that are going on. I am attempting to cook through our pantry and freezer for the next week, as a way of both saving money on our overspent budget and as a means of cleaning out food that I no longer want to keep in the house (like meat. and cheese. and store-bought applesauce.)
I had two bananas that were going mushy before we had a chance to eat them. So into the fridge they went until I could find time to make something out of them. I looked up banana recipes on one of my favorite blogs, 101 Cookbooks. And there was a recipe for cookies. With bananas. Weird, yet intriguing. Since I had (almost) all of the ingredients to make them, I decided to go for it. I didn’t have almond meal, and I did not feel like making some from scratch, so I tried to google substitutes and didn’t come up with anything I had on hand. So I decided to use the millet flour that I had sitting around taking up space in the fridge and hope for the best.
Next time, I will take the time to make almond meal if I don’t have it. But they are still delicious little treats.
