Time for week 2 of cooking through my CSA for the Vegan Month of Food!
I order my CSA goodies through Farmhouse Delivery, which allows me to schedule how often I want to get bushels. I’ve always opted for a larger bushel every other week so that I get a larger variety of items to cook with and save some money from a weekly delivery. This means that this week AND next week I’ll be cooking from the list below. Should be interesting to see how different I can make next week’s menu from the same ingredients. And we’ll see how far these goodies stretch across all those meals!
This week’s CSA delivery:
- sweet peppers
- a giant sweet potato
- summer squash
- butter lettuce
- watermelon (!!)
I love how here in TX, we’re still getting watermelon and summer squash in September. Summer seems to stretch on forever here, and I’m going to enjoy this produce as much as I can. (I am definitely ready to get rid of this heat, though!)
This week’s menu:
- Breakfast: Watermelon Mojito Smoothie
- Lunch: Nutty Sweet Potato Salad
- Dinner: Eggplant Ragout with Risotto
