Hello, Week 3! Time sure flies when you’re having fun!

Texas in the fall is bizarre. There is pumpkin spice everything everywhere, stores are promoting fall colors and cozy knits, and it’s still 90 degrees out with 85% humidity. Even this weekend’s “cool” front was short-lived. My brain is ready for warming fall meals of chili and oatmeal, and my body is still needing refreshing smoothies and raw salads. This week is my attempt at mixing the two. A spicy, yet cooling smoothie, roasted veggie salad topped with a refreshing herb dressing, and a comforting pasta sauce over raw noodles. Welcome to Fall in Texas.

  • watermelon

This week’s menu:

  • Breakfast: Spicy Watermelon Cooler
  • Lunch: Roasted Vegetable Salad with Herb Vinaigrette
  • Dinner: Creamy Pepper Sauce over Squash Noodles
