Weekly Menu: Modern Comfort Foods

Lots of vibrant green veggies this week! I am still getting a nice combination of summery squash and green beans, along with fall staples like eggplant, sweet potatoes, and, this week, FIGS! I really think half the fun of getting a CSA delivery is the surprise of what is in season week to week, especially in Texas. I am always surprised by at least one thing that’s in the mix.

This delivery actually had me a little stumped on what to use together for each meal, but the final results are probably my favorite menu of the month. A creamy and sweet green smoothie, a warm and bright grain salad, and a simple spiced curry bring comfort food to a new level this week.


This week’s CSA had:

  • green beans
  • green onions
  • avocado
  • sweet potatoes
  • squash
  • eggplant
  • cucumbers
  • arugula
  • figs

This week’s menu:

  • Breakfast: Vanilla Fig Protein Smoothie
  • Lunch: Green Bean and Quinoa Salad
  • Dinner: Sweet Potato Lentil Curry
